seemed to have difficulty grabbing plain text from this page ...

source shows it to be just text only

message shows ... "untitled page added"

note appears as ... text all garbled (running together with no farmatting like c/r etc)

Text files cause problems with UberClip, since the JavaScript that is running UberClip is copying the HTML of the selection.  Without proper HTML formatting, white spaces and carriage returns are ignored by the browsers' methods to get the selected text.

As an alternative, you can try clipping the entire page (it should be processed correctly) and then opening your note and deleting unwanted parts.  Or you could simply copy and paste the text directly into your note.  These two ways should preserve the formatting of .txt files.
